Gluten-free vegan Banana Loaf

This a recipe sent to me by MrsMittens that she enjoys as a treat, it is easy to make and tastes great. Just be careful not to eat it all at once.





Banana Loaf


~ingredients~


290g Doves Farm gluten free plain flour

100g sugar or equivalent of your favourite sugar substitue such as Xylitol

1/2 tsp salt

2 tsp baking powder

150g oats

3 bananas

125ml non dairy milk or water

2 tbsp sunflower oil


~Instructions~

Mix all dry ingredient in a bowl.


In a separate bowl mash the bananas well and mix with soya milk and sunflower oil

Combine all the ingredients and mix well, adding further water if needed to get it to a nice wet consistency.

Grease a loaf tin, pour in mixture into tin and bang on the side to make sure it spreads evenly around the bottom of the tin.

Put into a preheated oven on Gas Mark 4 for about an hour.
