Vegetable Goulash

This is another of MrsMittens favourite recipes, I haven't tried it yet but it sounds delicious, she assures me it is good and quick and easy to make. I think this is definitely one to try soon.

Vegetable Goulash

Ingredients
1 onion, finely chopped
Garlic
2 carrots, diced
3 medium courgettes, diced
1 tbsp paprika
Pinch of nutmeg
1 tbsp tomato puree
1 x 400g tin chopped tomatoes
1 x 400g tin red kidney beans
1 x 400g tin cannellini beans
¼ pint tomato juice
Salt and Pepper

‎1. Put the onion, garlic, carrots and courgettes into a pan with the oil and saute for 5 minutes until soft.

2. Stir in paprika, nutmeg, and tomato puree
3. Add rest of ingredients and cook over a low heat for 10 minutes.
